June 6th post

I'm posting yesterdays today because last night was yet another late night for us.  We're still adjusting to Steve's new schedule - he goes to class 5 days a week 9am-5pm in DC and commutes back to Baltimore then works Saturdays 7am to 7pm. It is only for 10 weeks but its an adjustment.  Last night he got a drink with a friend after class so he didn't get back until around 7:45 and we still had to go to the gym and have dinner.  It was a rushed late night but at least I had a quick dinner planned. I just had to make a substitution. 
Gotham and I had our morning walk.



Yesterday's breakfast was, again, 100% whole grain toast with 1/2 tbsp cookie butter and 1/2 tbsp almond butter with 1/2 a grapefruit with 1tsp of splenda sugar blend sprinkled on top. When it comes to breakfast, I can be pretty habitual. 

For lunch, I heated up a leftover cheddar jalapeno chicken burger that was left over from dinner last week.  I put it on 1/2 a pita with the cilantro lime mayonnaise I made for the burgers. I put some spinach on the burger, too. On the side I had apple slices and some Chili Cheese Wheat Thins. I ate this while re-watching the Season 1 finale of OITNB to prepare for Season 2.

I had my typical chocolate break with a Dove Promise, however, my GA got me a Russel Stover sample chocolate box as a going away gift and I had one of the candies at work. So guilty.  However, they've lasted a week so far, so I'm impressed. I still have 2 left.

I had my Chobani blueberry yogurt as a snack before the gym. It took Steve quite a while to get home, and I could feel myself getting hungry so I also had a stick of reduced fat string cheese. I think I just ate my gym snack too early not knowing when Steve would be home.

At the gym we did one of our circuits that you do 3 times through. Sorry, I forgot to take pictures of a work out because we were in such a rush, again.  Usually we do 2 days of gym, rest, 3 days of gym, rest, however with the schedule adjustment this week we went 4 days in a row and my muscles were feeling it yesterday. I am beyond glad today is a rest day.  I was struggling on my push ups.

After the gym I was making brown rice and stir fry. Brown rice takes 45 minutes to make and we were pressed for time so I made Jasmine rice instead.  This is a low calorie stir fry that I found here at skinny kitchen. I just made some adjustments to the vegetables because Steve is picky about vegetables.  I added a little Sriracha to the top of mine.  I, in true hurried fashion, forgot to take a picture of my dinner again, but here is a picture of the left over stir fry that was packaged into two containers for left overs.  It has onions, carrots, snow peas, peppers, broccoli and chicken in it. I am a big fan and will definitely make it again.

I also had one of these for dessert. Skinnycow makes AMAZING desserts for when you want some ice cream but don't want to kill your day. I only eat them on days where I have the room calorie wise, and definitely not every day. They also make ice cream bars, ice cream sandwiches in different flavors. They are fantastic.


I know for sure I had too much chocolate yesterday, but that was my choice and all part of why I like watching what I eat this way. I can have chocolate here and there but I'm sacrificing other things or just kicking my butt in the gym. Hopefully now that we're used to Steve's class a little more everything will settle down. I'll post again tonight and you'll get to see how I eat less on a rest day. Here is my nutritional pie chart for yesterday. I had a little over 500 calories left over it calculated in what I ate along with my work out for the day.
